Kabobs are normally savory, featuring delicious ingredients like chicken, beef, onion, mushrooms, bell peppers and more but what about making a sweet variety? These can feature fresh fruit but you can also use other tasty ingredients like marshmallows, candies and even slices of cake. Fruit skewers are colorful and appetizing and they make a really healthy dessert.

How To Make Japanese Style Fruit Skewers

This mouthwatering dessert can also be served as a savory side dish for fish recipes. You can serve them with plum sauce, a sweet sauce which is great with sweet or savory Asian dishes. This recipe makes enough to serve four people. Soak eight bamboo skewers in cold water for half an hour before you begin and preheat the grill.

You will need a cup of watermelon chunks, a cup of hulled fresh strawberries, a cup of whole, pitted litchis and two bananas in one inch slices. Thread the fruit alternately on to the prepared skewers and brush half a cup of plum sauce over the kabobs. Grill them for about five minutes, turning them frequently and serve hot.

Caramel And Nut Kabobs

This recipe, which serves four people, is a great way to finish dinner, especially in the summer if you have cooked the whole meal outdoors on the grill. You will need twelve cubes of pound cake for this recipe. Spread quarter of a cup of creamy peanut butter on two opposite sides of the cake.

Toss two quartered nectarines with a sliced banana and a little lemon juice, and then thread the cake pieces, nectarine chunks, and banana slices on four long skewers. Heat half a cup of caramel ice cream topping in a small pan, then brush it over the kabobs.
Grill them for about five minutes or until they are very warm, brushing the ice cream topping over them. If you prefer to broil the kabobs, broil them for about five minutes, keeping them five inches from the heat.

Banana Split Skewers

Anyone who enjoys banana splits will love this kabob version of the dish! Soak eight wooden skewers in cold water for half an hour. Cut two bananas into one and a half inch chunks and quarter of a small pineapple into similar sized pieces. Thread these on to the soaked skewers and add eight big hulled strawberries.

Combine two tablespoons of melted butter with a teaspoon of rum, brandy or pineapple juice and brush this over the fruit. Coat the grill rack with cooking spray and preheat it to moderately hot.

Grill the fruit kabobs directly over the coals for about eight minutes or until the bananas are golden brown and the fruit is warm. If you are using a gas grill, use a moderately high temperature. Serve the fruit kabobs with ice cream, your favorite ice cream syrup, and some toasted chopped pecans.

Sweet Potato Casserole With Toasted Marshmallows and Pecans!!

Heavenly delicious, sweet potatoes combined with coconut, cardamom, and heavy cream, than topped with a mixture of pecans and marshmallows toasted to perfection!! Recipe: 8 med sized sweet potatoes baked (than put trough a potato ricer) 1 stick butter divided into two 2 tbsp maple syrup 1 tbsp vanilla essence 1/3 cup brown sugar, (maybe omitted if potatoes are very sweet) 1/2 tsp cardamom powder 3 egg yolks 3/4 cup dessicated coconut (not sweetened) pinch of salt 2/3 cup brown sugar (maybe ommited if potatoes are too sweet) 3/4 cup toasted pecan pieces (unsalted) 2 tbsp whipping cream 3 cups marshmallows (can definately add more if you choose) Method: Bake the sweet potatoes in the microwave by wrapping the potatoes individualy in wet paper towel and than rewrapping it in saran wrap, once cooled unwrap and put it through the potato ricer. Add the half stick of soft butter, stir than add the rest of the ingridiants one by one mixing after each ingredient added. Than transfer into a 10" by 12" inch casserole dish and put it in a preheated 350 degree oven for 20 min. Keep aside the other half of butter, pecans, brown sugar (optional) and marshmallows for the topping. In a separate bowl mix together the reserved 1/2 stick butter, marshmallows, and pecan mixture and layer it on top of the sweet potatoe mixture and stick it back in the oven until the marshmellows are toasted and have a nice golden color on it. Let cool and enjoy!!!

If you learned to cook from your mother, do you wonder why she never told you the one all-purpose way to tell when fruit is ripe and ready to eat? That's because there isn't one. There are more than 50 different species of fruit, and they all mature in different ways.

Bananas and avocados are picked green and ripen off the tree. Most varieties of pears can be picked when full-sized but still green and very firm. Place them in a warm place and they ripen in a few days. Nectarines and plums can be picked when colorful but still very firm. They will ripen to your desired amount of firmness or softness after a few days at room temperature. Oranges, lemons, limes, and grapefruit won't ripen after being picked from the tree. Most pineapples in the United States and Canada are from Hawaii. These pineapples have a golden yellow tan or reddish orange color when ripe. The golden color starts at the bottom. The upper part of the pineapple may be green but the further the golden color rises up the pineapple, the sweeter it will be. The true test for ripeness in all pineapples is to look at the bottom of the fruit. A yellow color breaking through the bottom indicates that sugar has developed in the pineapple and is ready to eat. If no yellow color exists, the sugar has not developed and the pineapple will not be sweet. Most peaches taste best from late June through August. At farm stands, aroma is an indicator. Fruit should smell as good as it tastes. Ripe cantaloupe should give a sweet aroma when sniffed where the stem was attached. But scent doesn't always work in supermarkets, since refrigeration stunts the bouquet. Apples are crisp and flavorful when full-sized and when they display the identifying color of their variety. Most apples mature during the Autumn months of September and October. There are also a few Summer varieties. Color is also a tip-off with certain fruits. Ripe peaches have a rich, yellowish undertone, as do cantaloupes, while watermelons should have a whitish yellow color on the underbelly side. They should also resonate when slapped, like a musical instrument. Strawberries, cherries, raspberries, blackberries, and blueberries are ripe and should be picked when the berry shows a rich, even color with no white spots. Grapes are harvested when fully ripe yet firm. Use color as a guide to the sweetness of the fruit. Green grapes should have a yellow cast or straw color with a touch of amber, when fully ripe. Red grapes should be a deep crimson, not a milky or pale red. Blue grapes should be darkly hued, almost black, not pale or tinged with green. Grapes should be plump. You can always judge the freshness of grapes by the stem. The greener the stem, the fresher the grapes.

Fresh fruit provides Vitamin A (apha-carotene, beta-carotene and retinol), Vitamin C, most of the B Vitamins (thiamine, riboflavin, niacin, pantothenic acid, folate and folic acid), and fiber.

Frozen grapes are a great, nutritious snack for kids. Put Red Flame or other seedless grapes on a tray in the freezer. When frozen, put them in a resealable plastic bag and return then to the freezer. Then kids can have sweet, frozen snacks anytime.

Prepare a fresh fruit salad by mixing your choice of fruit cut into cubes or balls. Chill the mixture in the refrigerator as the juices blend. No dressing is required. My favorite fruit salad combination is grapes, cantaloupe, watermelon, pineapple, and strawberries.

For a simple but delicious dip for fruit mix equal amounts of whipped topping, marshmallow fluff, and fruit-flavored yogurt. Lime, lemon, orange, and strawberry yogurt taste great with fresh fruit.

Stuffed Pineapple Boats

This is a fun tropical recipe for special guests or a backyard luau.

2 small to medium pineapples

1 teaspoon freshly grated ginger or 1/3 teaspoon Watkins Ground Ginger

12 to 16 ounces roasted chicken breast meat, cut into 1/2-inch cubes

2 tablespoons cider vinegar

1 teaspoon Watkins Orange Extract

1 tablespoon almond or walnut oil

1 cup diced celery

Salt to taste

2 tablespoons sliced, toasted almonds

2 tablespoons shredded coconut

1 teaspoon minced jalapeño pepper

First hollow each pineapple. Cut pineapples in half lengthwise through crown and leaves. Remove the inner core by making a V cut underneath it, then lifting it out. With a short, sharp knife, cut all around the inside of the fruit leaving a 1/2 inch thick rim all around. Lift out the fruit inside the cavity and cut into 1/2-inch cubes or ball shapes. The attached leaves add to the decoration. To keep the boat from rocking, it may be necessary to cut a thin slice from the bottom of each half. You should have about 6 cups of cut up pineapple. Save any juice for the dressing as you work. Squeeze out juice from any bits of extra pineapple to extract more juice. You should have about 1/4 cup juice. If serving immediately combine pineapple with chicken, celery, almonds, and jalapeño in a mixing bowl. Combine ginger, vinegar, orange extract, oil, salt, and reserved pineapple juice in a separate bowl. Pour over salad mixture and mix well. Put boats on large plates. Stuff each with 1/4 of the salad mixture and sprinkle with coconut. Serve immediately. Makes 4 servings.

If you are entertaining a group of guests choose a large pineapple for a serving dish, add salad mixture to pineapple halves, and let guests serve themselves.

Cooking Tip

To prepare this dish in advance, mix all ingredients except chicken. Stir in the chicken just before serving. The acids and enzymes in the pineapple turn the meat to mush after a few hours. Turkey or pork tenderloin may be used in place of chicken in this recipe.

As we head into fall, our thoughts turn to entertain. Will not be long before Thanksgiving rolls around and after a month is Christmas. As Americans, our holiday traditions seem to center around good food with family and friends. If you take it up to you to host a party or just to court for a friend or a relative, here are some old recipes of my collection of vintage recipes. Both are ideal for a fun vacation or just a good sit-down familyMeals. Yam Souffle feast is a perfect recipe for busy hosts / hostesses. It is not only delicious, but it looks very festive with a garnish of miniature marshmallows, pecans and maraschino cherries. The best part? Can be assembled and refrigerated for up to 8 hours in advance to cook! Apricot compote is a delicious winter recipe for hot fruit, which certainly fallen.

YAM SOUFFLE FESTIVAL

3 eggs
2 tablespoons brown sugar (if using fresh potatoes)
2 teaspoons grated orange peel
1tsp salt
1/4 tsp nutmeg
3 cans (16 oz each) yams or 6 yams, cooked, peeled and mashed
2/3 cup light cream or milk
2/3 cup chopped pecans
6 tbsp butter, melted
miniature marshmallows for garnish
pecan halves for garnish
maraschino cherry halves, drained, for garnish

As early as 8 hours before baking, beat eggs, sugar, orange peel and seasonings in a large mixing bowl until light and fluffy. Stir in yams, cream, pecans, and butter. Chill in baking dish. Bake at 325 degrees, in a 1 1/2-qt casserole dish for 50 minutes. Garnish by alternating marshmallows, pecan halves, and cherry halves around top of casserole.

WINTER APRICOT COMPOTE

If you are a follower of this blog, you know that several of my recipes are from my mother's collection of "The Workbasket" magazine. This now defunct little magazine was the pride of many a rural homemaker when I was a child. This is another recipe from one of the 1970s "The Workbasket" magizine.

2 cans (30 oz each) apricot halves
1 cup apricot nectar
1 1/2 tbsp cornstarch
3 tbsp cold water
1 tbsp curry powder
1/2 cup firmly packed light brown sugar
1 cup dried pitted prunes
1 can (30 oz)pear halves, drained
1/2 cup toasted shredded coconut, optional

Pour 2 cups syrup from apricots into a large skillet. (Use remaining syrup in drinks and desserts.) Add nectar to syrup; boil rapidly until volume is reduced to 1 1/2 cups. Blend cornstarch and water in a large saucepan; stir in curry powder and sugar. Gradually stir in syrup mixture. Simmer mixture, stirring constantly, for 30 seconds. Add prunes and drained apricot and pear halves; simmer uncovered for about 5 minutes or just until heated through. Spoon into attractive chafing dish and serve with coconut, if desired.
